Rubio’s® Goes Tropical with New Sustainable Shrimp Offerings



 Our friends at Rubio's have done it again!

In June we learned all about Rubio's sustainable seafood practices.  Now there are even MORE delicious options as Rubio's has added two new menu items to their palate-pleasing arsenal: Tropical Shrimp Tacos and Burritos!

As if we needed more reasons to love Rubio's, right?



These new menu items are inspired by the flavors of the Yucatan region of Mexico and represent Rubio’s dedication to being a friend of the ocean and serving sustainable seafood whenever possible.


Both chef-crafted dishes, created by the Rubio’s culinary team, are served in warm flour tortillas and feature sustainable shrimp that’s been marinated in a blend of ancho chiles, herbs, garlic, and olive oil. Both dishes are topped with pickled onions, a fruity mango-habanero salsa and a salsa that highlights flavors from the Yucatan such as achiote, garlic, cumin, orange juice and lime. The Tropical Shrimp Two Taco plate is served with tortilla chips and “no-fried” pinto beans, while the burrito comes complete with handmade guacamole, Mexican rice, black beans and crisp romaine lettuce.

Appleton Jamaica Rum: Rum Pineapple Tower

This summer, surprise your family and friends with a delicious and easy-to-make- Rum Pineapple Tower cocktail. It’s a drink that will complement your favorite outdoor meal and grace any viewing of a warm-weather sunset. Make this recipe a couple hours before entertaining to allow the pineapple and orange slices to marinate in the rum, and their juices to properly contribute to the drink. Serve with ice in a tumbler or if properly chilled, in white wine glasses with fresh fruit garnishes.  

Pineapple Tower 
10 ounces Appleton Jamaica Rum 
12 ounces pineapple juice 
4 ounces orange juice 
3 ounces Bols banana liqueur  
1.5 ounces Rose’s grenadine 
2 ounces lime juice 
1 whole pineapple, sliced 
2 oranges, sliced 
Maraschino cherries 

Directions: Slice the skin off of a pineapple and stack it in a pitcher. Slice a couple oranges and stack those too. Pour in the rum, pineapple juice, orange juice, banana liqueur, grenadine, and lime juice, and gently stir. Garnish with maraschino cherries.
